Cornbread Waffles and Chili
Prep Time: 15 minutes
Cook Time: 60 minutes
Ingredients:
Chili
  • 1 lb of ground meat (beef/turkey)
  • 1 link smoked sausage
  • 1 can light red kidney beans
  • 1 can cannelini/white kidney beans
  • chili seasoning to taste (recipe below)
  • 1 can diced or crushed tomatoes
  • 1 small can tomato sauce
  • 1 can chicken broth (low sodium variety adds flavor without the added sodium)

Cornbread
  • 1 1/4 cup yellow corn meal
  • 1/2 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup milk (you can also use 1 1/2 cups of milk)
  • 1/4 cup oil/butter or combination
Directions:
  1. Heat large pot and add ground meat, cook until fully done.  Drain meat, return pot to stove and add smoked sausage.  Cook until browned.  
  2. Return ground meat to pot and combine with smoked sausage.  Stir in 1/4 can of chicken broth until all brown spots have been removed form bottom of the pot.  
  3. Add the can of tomatoes and sauce. Let it come to a simmer.  
  4. Add chili seasoning and stir.  Simmer for 10-15 minutes on low heat.  
  5. Combine dry ingredients for waffles, then add wet ingredients until combined throughly. A few lumps are fine.  Prepare waffle iron by spraying with cooking oil.  Cook cornbread waffles until they are not steaming.  You want them firm so they hold up to the chili but not overdone.  Set aside and keep warm.
  6. Add 2 cans of beans to the chili.  Stir and simmer another 10-15 minutes on low heat.
  7. Taste and adjust salt and spice as desired.  This chili should not be thick because the cornbread waffles will soak up liquid.  If the chili is too thick add more chicken broth. 
  8. Serve with 1-2 squares of the cornbread waffles or make a full waffle with chili and share :) 
  9. Optional chili bar/fixing’s ideas include: cheddar cheese, diced onion, cilantro, jalapeños, fresh diced tomatoes, sour cream

Chili Seasoning

Feel free to purchase pre-made seasoning.  Here you can control spice and sodium.
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dash of crushed red pepper (optional)
  • 1 tsp parsley
  • 1 tsp basil
  • 1 tsp flour (if you desire a thicker chili)
  • salt to taste
Combine all ingredients in a bowl before adding to chili
