Apple Dumplings
This is a super easy, super quick dessert. I use less than 1/2 of the sugar and Mountain Dew than in my previous life :) and I don’t miss it!
Ingredients:
2 large apples – I like Braeburn but Granny Smith or any firm one will do
2 cans of crescent rolls
1/2 stick of butter
1 cup of sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla extract
1/2 can of Mountain Dew or other citrus soda
Instructions:
Pre-heat oven to 350 degrees. Peel, core and cut each apple into 8 slices. Keep apples in cold lemon water (quart of water to 2 tbsp lemon juice) to keep them from browning. Butter a casserole dish. Roll each apple slice in one crescent roll and place in dish side by side. Melt the butter in a sauce pan on low heat and stir in the sugar, cinnamon and nutmeg. Once the sugar has dissolved remove from heat, add vanilla and stir. Pour over the crescent rolls then pour Mountain Dew down the middle and bake for 35-45 minutes. Let cool and serve with ice cream if desired.
